  1. cut the stems out of the mushrooms, set aside.
  2. hollow out the mushrooms, set bits aside.
  3. chop bits and stems coarsely.
  4. scramble sausage until browned.
  5. add the chopped stems to sausage, cook 5 minutes more.
  6. stuff sausage into mushrooms, top with cheese.
  7. broil in oven for 15 minutes at 400°F until cheese is bubbly.
