Grilled Squash & Halibut w/ Green Beans & Portobellos. I was originally looking for a basic recipe to oven roast veggies and decided to try this. I cut the cloves of garlic in half lengthwise fried them in the oil until fragrant and then followed the recipe with the exception of using green beans and pre-steamed carrots along with the yellow squash. Preheat a grill to medium high.
Very good recipe and easy to make. Since the steps in the recipe are not detailed I'll add a few tips. It's better to use a squash that has a smaller seed bulb as when slicing the bulb you will get rings or crescents which can fall through the grill grates if you're not careful. Grilled yellow squash goes well with any grilled meat and is a simple way to complete a meal entirely on the grill. Often on summer nights, we will just grill some meat and yellow squash or zucchini and serve a salad. This meal can be made in about half an hour and is a great excuse to spend some time outside. - Slice squash lengthwise in 1/2" thick pieces and set aside.
- Mix 1/2 cup of olive oil, pepper & garlic salt and baste squash and grill in ribbed pan until tender.
- Cut halibut into about 1" to 1 1/2" pieces.
- Heat 2 tbsp olive oil in pan and cook halibut with lemon juice.
- Heat remaining 2 tbsp. olive oil in another pan and sauté green beans & mushrooms. Season to taste with salt & pepper..
- Place squash on plate and top with halibut, green beans, & mushrooms..
- Sprinkle lemon zest on top for extra pop.
